Soup Bases

As we believe in quality over quantity, our restaurant only offers 4 soup bases. Many customers had asked me what is so special about our soups, hence I shall introduce the soups, starting with the most popular, to you here.

1. Laksa (right of pic)
This laksa broth is our restaurant's specialty. Not only is the laksa paste formula created by the chef (Wan Sing), the paste is also made over a span of a few hours to ensure the aroma of the spices in the paste will be fully released when added into the soup. The traditional laksa is famous for its rich coconut content, making it a yummy yet sinful dish to savor. Being a sports person, who loves good food but believes in eating healthy, Wan Sing created this yummy, tasty but healthy laksa broth (as very little coconut milk is used) for all those who love laksa but had been avoiding it due to its high coconut content. Hence, if you are craving for laksa and afraid of putting on too much calories, just head over to Ming Sing Steamboat to satisfy your craving without feeling sinful!

2. Sukiyaki (left of pic)
I believe many of you who frequent Japanese restaurant will know what Sukiyaki taste like, sweet and salty but goes really well with beef shabu shabu. For a broth meant for steamboat, the broth cannot be made too sweet and salty, hence our restaurant's sukiyaki soup is the lighter version of the sukiyaki broth served at Japanese restaurants. Some customers asked me if we used beef to brew the soup. Answer is NO. Rest assured that our soup is made solely from vegetables. If you ask me what goes best with this sukiyaki soup, it will be the beef and mutton shabu shabu, and lamb flab. As the soup is not too strong in flavour, most ingredients can go into the soup without losing its flavour.

3. Herbal Chicken (left of pic)
If you like herbal soups, this will be the soup for you. The herbal chicken soup served to customes is a mix of concentrated herbal chicken soup and chicken soup, and a serving of mix herbs. If you do not like your herbal soup to taste too herbal, you can take out some of the herbs that was added into the soup upon serving. However, if you like your herbal soup to be thick, let the soup brew for some time with the herbs in it and the soup will be rich with herbal taste.

4. Chicken Soup (right of pic)
This soup is best drank on cold rainy days, or when you are hungry and craving for a simple hot soup to warm up your stomach. Without MSG added, this soup is still rich and flavourful as it is brewed at least 9 hours daily. If you are down with a cold, this soup might just be the best remedy for you!

In brewing the soups, we stick strictly to three rules: less oil, less coconut and NO MSG. Some customers have feedback asking how come they feel thirsty after eating our steamboat. Are we sure we did not add MSG into our soups? Yes, we can confidently assure you that there is NO MSG added into our soups. However, ingredients supplied by suppliers may contain MSG in them, e.g. the fishball, hence causing you to feel thirsty after your meal.

Lastly, just some tips for your referencing:
1. If you feel your soup is too salty, it is most likely due to adding of seafood ingredients and over-boiling of soup such that most of the water content in it has evaporated. When that happens, please feel free to ask the waitress to top up your soup with our refills.
2. If you feel that your laksa broth is too diluted after a few top-ups, let the waitress know and she will top up your soup with concentrated laksa broth.
